This year we decided not to go home to Fresno for Thanksgiving, we missed everyone a lot but we figured that it would be easier for everyone if we just stayed here this year.
Lucky for us Kurtis has some family here in Orange County and we went over to their house for a super yummy dinner. We also had a Thanksgiving potluck at work and I offered to make the Turkey. I used the Good Eats recipe from Alton Brown and it was amazing. Kurtis said that hands down it was the best Turkey he has ever had. We are so thankful for everything that we have been blessed with, our home and family and all of you!

Kitchenaid Love
For our three year anniversary on Monday Kurtis and I had a really simple night, it could not have been better.
We went out to dinner at Claim Jumpers which is where we had our first date we came home and exchanged gifts and then watched some episodes of our favorite show psych.
I got a KitchenAid, yes that is right my sweet wonderful amazing handsome hubby bought me a kitchenaid. This marriage now has a fourth person in it (the third being the dog.)
There was a point that night when I looked over at my dear Mr. and said "Man I wish everyone was as happily married at we are." It is true that we don't have everything. We don't have a baby, but we do have out sweet Audrey Puppy who I think is pretty swell. We don't have a lot of money but we do have food and a roof over out head. We don't have a house but we have a little apartment home that is full of love.
I am greatful for what I have and what I have been given and that is- A stinkin awesome husband who is hot and gives me a kitchenAid mixer!

Apple Pie the lazy way
Whit's Best ever apple pie.
I actually have 3 apple pie recipe's that is how much I love apple pie, 1 plain, 1 with pecans and caramel and 1 with cheese.
For the crust:
if you are feeling lazy : 2 pre-made pie crusts and 1 cup shreaded cheddar cheese (i perfer sharp.) Sprinkle half of the cheese over the first pie crust, but in apple filling, then top with 2nd crust sprinkle cheese on top.
If you feel like having a Martha Stewart day
2 1/2 cups all-purpose flour (spooned and leveled), plus more for rolling 1 teaspoon salt 1 tablespoon sugar 3/4 cup (1 1/2 sticks) cold unsalted butter, cut into pieces 1 cups shredded sharp cheddar
1/4 to 1/2 cup ice water
Mix flour, sugar and salt. Add in the butter and cheddar cheese, mix until it resembles a coarse meal.
Sprinkle with 2 tablespoons ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to 2 tablespoons water, 1 tablespoon at a time). Don't overmix. Divide into two disks. Turn dough out onto a large piece of plastic wrap. Fold plastic over dough; press to shape into a 1-inch-thick disk. Refrigerate until firm, at least 1 hour (or up to 3 days).
For the filling,
4 apples-any kind you like best.
4 tablespoons flour
2 tablespoons lemon juice
3/4 cup sugar
1 teaspoon cinnamon
dash allspice, or nutmeg or pumpkin pie spice (whatever you have)
2 tablespoons brown sugar
1/2 teaspoon salt.
Mix together, place in bottom crust, then top with top crust. Cut 3 or 4 slits in the top crust to let the steam out bake in a preheated oven at 425 for 20 min, reduce to 375 and bake for another 40 min until crust is golden brown.
Enjoy!

Crafty time and Apple pie

It has been a pretty low key week,I had yesterday and today off so I spent some time on home beautification . I've really been lusting after some new throw pillows that are listed on Etsy... But as Kurtis keeps reminding me, we are poor. So I made these two lovelies, using my famous no-sew method (glue gun). I used some freezer paper to make the stencil on the monogrammed "u" . I am not quite sure what I want to do with the other one, so the ribbon bow will have to do for now.


I also made apple pie, my favorite. Kurtis likes it to, but he prefers it without the Cheddar cheese.
My mom always says "An apple pie without cheese is like a hug without a squeeze." So we compromised it by putting the cheese in the crust. And it turned out awesome! If you have never tried apple pie with cheese, try it. I know that it will change your life, just like it did mine.
