Yummy Summer Salad


I love salad and in the summer it is pretty much all I eat so here is the recipe for my favorite, which I made for Bunco last week

you need

Strawberry's
Pecan's (candied or not)
Feta Cheese
Poppy seed dressing my favorite is Brianna's
Salad mix (Since I love Arugula so much sometimes that is all I use)

Grab a plate or a bowl or a trough whatever you want to put the salad in and just toss that spring mix in. Then take some strawberry's however many you like and cut them up toss them in there to then take some feta cheese and add however much you like, last come the pecans lay on a good amount of those yummy fellas and then pour on that dressing. Toss the salad and serve immediately.

There really is no science to it just a few basic ingredients that make my favorite salad that I could eat for breakfast, lunch and dinner, and sometimes I do.

Did I ever mention

Did I ever mention that I have ridiculously sensitive skin?

Well I do, my skin breaks out in red splotches all the time, when I try a new laundry soap, when I wear my animation costume, and when it gets hot like it was today I get this super ugly heat rash.I wish that I was brave enough to post pictures but if I did you all would stop talking to me and ship me off to a leper colony.

In other news I made this and this for dinner this week and it was super yummy try it out. I must have been living under a rock because I have just discovered the Pioneer Woman and I'm wondering how I can make her my new best friend. I mean we have so much in common, a love of dogs, red hair, we both live in Oklahoma (well I don't actually live there but my dad does.)

Nothing beats a heat rash like ice cream and the PW.

Hello my name is Whitney


And I am addicted to Nutella

"Hello Whitney" If they had a nutella anonymous meeting I would go, heck I might even be the president. I have been thinking about other ways I can consume massive amounts of Nutella (besides out of the jar, with a spoon in the middle of the night.) Everyone in my little family loves Nutella, even Audrey has helped her self to some.

Last week while I was supposed to be working I had the idea of making a Nutella cookie. I mean Nutella has many of the same qualities as peanut butter, it should work. And it did. So if you love Nutella (of course you do who doesn't!) try out these cookies. Or just let me make some for you and we can have a cookie party.

Nutella Cookies

Ingredients

  • 1 1/2 sticks of unsalted butter, room temperature
  • 3/4 cup of brown sugar
  • 3/4 cup of white sugar
  • 1 cup of Nutella
  • 1/2 teaspoon of vanilla
  • 2 eggs
  • 2 cups, plus 2 tablespoons of all-purpose flour
  • 1/4 cup of unsweetened cocoa
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup of chopped hazelnuts (optional)
Steps

1. Cream butter until fluffy (about 2 minutes.)
2. Add the sugars and the Nutella and mix well scrapping the sides of the bowl.
3. Add the eggs 1 at a time and beat for 30 seconds each. Then add the Vanilla.
4. In a small mixing bowl sift together the flour, cocoa, baking soda and salt.
5. Mix into the Nutella/sugar mixture and then add the hazelnuts.
6. Chill for 10 minutes.
7. Spoon tablespoon-sized drops of dough onto parchment paper lined cookie sheets. Bake at 350F for 10-12 minutes. Allow to cool on the sheets for a minute or two before transferring to a wire rack to finish cooling. Dust with powered sugar if you'd like.

P.S. these are super yummy warmed up with ice cream.
