Apple Pie the lazy way

Whit's Best ever apple pie.

I actually have 3 apple pie recipe's that is how much I love apple pie, 1 plain, 1 with pecans and caramel and 1 with cheese.

For the crust:

if you are feeling lazy : 2 pre-made pie crusts and 1 cup shreaded cheddar cheese (i perfer sharp.) Sprinkle half of the cheese over the first pie crust, but in apple filling, then top with 2nd crust sprinkle cheese on top.

If you feel like having a Martha Stewart day

  • 2 1/2 cups all-purpose flour (spooned and leveled), plus more for rolling
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 3/4 cup (1 1/2 sticks) cold unsalted butter, cut into pieces
  • 1 cups shredded sharp cheddar
  • 1/4 to 1/2 cup ice water


  • Mix flour, sugar and salt. Add in the butter and cheddar cheese, mix until it resembles a coarse meal.

  • Sprinkle with 2 tablespoons ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to 2 tablespoons water, 1 tablespoon at a time). Don't overmix.
  • Divide into two disks. Turn dough out onto a large piece of plastic wrap. Fold plastic over dough; press to shape into a 1-inch-thick disk. Refrigerate until firm, at least 1 hour (or up to 3 days).

  • For the filling,
    4 apples-any kind you like best.
    4 tablespoons flour
    2 tablespoons lemon juice
    3/4 cup sugar
    1 teaspoon cinnamon
    dash allspice, or nutmeg or pumpkin pie spice (whatever you have)
    2 tablespoons brown sugar
    1/2 teaspoon salt.

    Mix together, place in bottom crust, then top with top crust. Cut 3 or 4 slits in the top crust to let the steam out bake in a preheated oven at 425 for 20 min, reduce to 375 and bake for another 40 min until crust is golden brown.
